ABOUT OUR TRADITIONAL METHOD SPARKLING WHITE WINE
A Traditional Method (methode champenoise) sparkling white wine made with 50% Chardonnay and 50% Pinot Meunier from the 2021 harvest at Ham Street Vineyard which was in organic conversion at the time. The bunches were pressed by our winemakers Daniel & Nicola Ham then fermented and aged in Burgundy barrels. Following 9 months of élevage, the wine was bottled in July 2022 with no fining or filtration and no addition of any sulphites. The wine is currently in maturation, awaiting release.
